SLOW FOOD DINNER - THE CUISINE OF HANGZHOU

Monday October 25th 2010, 7PM.

 

Hangzhou Province is not far from Shanghai, but whilst the Hangzhou cuisine is somewhat similar to Shanghainese cuisine, it maintains its culinary independence.  It is known for its lighter flavours and delicate cooking methods. 

 

Mr. Ng, owner and Head Chef of “Hong Zhou Restaurant”, is from a descendent of chefs.  His father was the Head Chef of Tin Heung Lau, Hong Kong.  He follows his father’s healthy rules of less salt and oil, whilst maintaining the original taste of the Hangzhou style.  All his ingredients are imported from his hometown, from fish to bamboo shoots, chillies to vegetables. 

 

Recently, Mr. Ng was award One Michelin Star.

 

For our Slow Food dinner, we will be having some of the Hangzhou and Mr. Ng’s specialities.  The following are just some of the highlights:-

 

-          Longjing shrimps (small freshwater shrimps, stir fried with Longjing tea leaves, Shaoxing wine and other ingredients),

-          Dongpo's pork (Pork belly cubes, half fat - half meat); which was inspired by the great Chinese poet and calligrapher “Su Dongpo”.  The pork is cooked for at least 4 hours

-          Smoked Yellow Fish;

-          Wealthy Chicken and is prepared & cooked for @7 hours

-          “Shun Choi” Vegetable & Fish Balls Soup; to prepare the fish balls, the fish paste is beaten at least 600.  The fish balls simply “melts in your mouth” which is very different to the Cantonese style.

 

The meal is often served with hot Shaoxing (yellow wine) and dried plums.  Mr. Ng refines his own Shaoxing that can be served both hot or cold.  We will experience Mr. Ng’s special cold Shaoxing as an aperitif.

 

Which brings us to drink accompaniments.  Shaoxing is of course an obvious choice, but wines with high acidity, freshness and aromatics like Riesling, Gewurztraminer, Gruner Veltliner and Italian/Spanish varietals will go very well.   In the reds lighter, red berried styles such as Pinot Noir, Gamay (Beaujolais) or Rose’s would be ideal.

 

We have two tables – so maximum 24 people.
